    Honey is a sweet, syrup-like substance that bees produce from the nectar of flowering plants. The bees collect the nectar and then consume, digest, and regurgitate it inside the beehive to produce honey. Honey is stored in wax-like structures called honeycombs, which are gathered by humans through the practice of beekeeping.

    Honey is considered to be “one of the most healing substances on earth. It’s been used for thousands of years to treat a wide range of ailments and conditions, both internal and external. It has antiviral, anti-fungal and antibacterial properties. Our raw Greek honey is not pasteurized, filtered, or processed, allowing it to retain its natural health-promoting properties.

    Honey contains trace amounts of vitamins, minerals, electrolytes, enzymes, amino acids, and flavonoids. These compounds are responsible for some of honey's important health benefits and part of what distinguishes the sweetener from more traditional ones like sugar. Because of honey's trace nutrients, the sweetener has been thought to have antibacterial, antioxidant and anti-inflammatory properties, along with healing potential for ailments such as sore throats, digestive disorders, and burns.

    POLLEN: Honeybees gather pollen from plant anthers as they forage on different blossoms, packing the nutrient-rich plant material into small nuggets stored on their hind legs (bee's knees!). Once field bees return with the pollen baskets, they build "bee bread" with it to use as a protein source within the hive. We collect pollen only on a need basis in short week-long windows as bees enter the hive by using special pollen-removing screens. Like local raw honey, bee pollen is usually sought for seasonal allergy relief. A great source of protein and vitamins, pollen can easily be eaten in smoothies, yoghurt and cereal, and sprinkled on top of cocktails. Colourful but not particularly flavorful, pollen grains range from sweet to slightly bitter and sour to chalky and have a soft, delicate texture.

    PROPOLIS: Honeybees collect resins from tree buds and flowers to mix with their own saliva and beeswax and to form a certain "bee glue" also known as propolis. This sticky, viscous anti-septic substance is then used by bees to seal up cracks and openings in the hive, protecting their hive environment against infections, harsh weather, and predators. Propolis is a vital part of the hive's immunity system, acting as a disinfectant agent. For human consumption, studies are ongoing about the possible benefits of adding propolis to treatment against cancer, UV radiation, and inflammation.
    This product can be used with caution in drinks, compresses, throat gargles, and baths, especially during the cold season. Be careful not to spill the liquid, as propolis tincture has a very distinct, rich yellow colour that easily stains fabric.

    Crystallization and quality: Crystallization is a natural phenomenon not related to the quality of the honey and does not cause any changes in its' nutritional value. Crystallized honey is neither adulterated nor damaged. It can be liquidated easily if you place the jar in a bain -mari with hot water 40 ° Celsius for a few mins.
